Sometimes we all want to eat right – right? Yet we never know what to eat and sometimes the recipes are so complicated. I’ve been searching through the Cancer Council NSW recipe pages and noticed this great recipe by Emily Fleming that I wanted to share with you. Whenever I’m feeling a bit depressed around Day 26 and 27 I like to eat more green food because somehow it makes me “feel” better on the inside.

Quick & Easy Silverbeet Pockets
4 cups mixed diced veggies – (carrots, onions, capsicum, mushroom, sweet potato, corn..anything works)
8 large silverbeet leaves
1 cup chopped herbs (parsley, basil – which ever herb you like)
1 tbsp oil
75g cheese (any cheese you like; I like feta)
Sautee diced veg in oil, season. Take off heat and stir through chopped herbs. Place a large handful of mixture in the center spine of each silverbeet leaf. Top with cheese. Wrap leaves to form a pocket.
